Easy Recipe

Easy Summer Recipe from Our Culinary Department


Watermelon Salad Recipe - Yield 4 servings
5 cups seeded watermelon cubes
3 cups arugula green salad mix
1 small red onion thinly sliced
½ cup toasted sliced almonds
½ cup goat cheese, crumbled
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1/2 cup raspberry puree
Fresh cracked black pepper

Procedure
1. Mix together-olive oil, red wine vinegar, raspberry puree
2. Add sliced onions and cubed watermelon, toss gently and let sit up to 20-30 minutes in refrigeration before service.
